So I need to remove the gunnel cap in order to reach to my stern rodholder as it came loose over time and I can't reach any other way. Will need to mount backing plate to it and probably do all of them. I understand that these are caulked onto the hull and bonded. How hard is it to do this? Can anyone who has done this show me some pictures.

All the rod holders are held in with three fasteners. Two are screws, and one is a bolt with a lock nut. You can easily remove the screws. The bolt is the PIA. I drilled them out. I wedged a screwdriver between the rod holder and the screw to hold it in place. Then I cut a custom backing plate and only used bolts.

I’ve done the back corners on 2 boats. One had speakers below, removed and went in that way. Mine I was able to access through seacock access on port side, and removing a 2 drawer tackle storage box in the transom on starboard side. I’ve got a sink in that back corner not a livewell.
Removing that gunnel cap you will still only have access through the rod holder grommet holes. I’d look for another way in.

I guess I need to cut a hole beneath the rodholder.
