The trim where the rear hatch to my 2360 is discolored and chipped as well as the trim to the door into the cabin the paint is chipped. Any recommendations on how to go about a DIY touch up paint on those trims?

To clarify, are you referring to the powder coated frame around the doors to the bilge and console?

Short of removal and repowder coating or replacing touch up painting is about all you can do. But once powdercoat starts to flake it will likely start in other areas too so you'll have to keep chasing it.
Best to get something on those areas now to slow it down.
I believe there is recommended paint for such a task but dont have specifics offhand. Best thing to do is run a search on google for powdercoat touch up paint.
