I am trying to evaluate the quality of Sailfish compared to others such as Key West, Robolo, Cobia, and Grady

I only compared the Sailfish to Robalo and Grady. I previously owned a Robalo and my issue with Robalo was wood. They had it in several places and I had the fish box cover replaced under warranty it went bad so fast. Wood and no caulk is not a good idea. I liked the R247 and was willing to put up with the wood knowing day one I'd take everything apart and caulk it properly, but my wife fell in love with the seating on the Sailfish so we could have large family outings.
The Grady seemed overpriced for what you get. I didn't like the aft seating at all and felt the boat should have been less expensive than the Sailfish, but it isn't.
As I'll tell anyone, get the boat that works best for your needs. All of the dual consoles are a compromise. I easily get 10-12 people out and it will still bring up a towable full of grandkids on plane. I take my friends out fishing offshore 70-80 miles to the gulf stream on nice days and we catch tuna and mahi. Take grandkids out for fish in the Chesapeake bay, rivers and ocean front regularly.
As far quality, I have no serious complaints about the Sailfish. This will be it's third year and it still looks like new. I have done a lot of additions to make it "my" boat and doing so has made me appreciate the Sailfish design even more.

I bought my 245 DC in 2018, looked at all the comparable DC's on the market at the time, the Cobia was not out yet, in addition to the ones you mention also think I looked at a Whaler and the Pursuits. The quality varied a bit between all, for me the layout of the Sailfish was the clincher. Has been a great boat, don't regret it for one second, there's been some annoying minor issues that really had as much/more to do with my servicing dealership than the manufacturer, but all in all, great purchase. As Richard said, any DC is a compromise, the biggest thing I have noticed that is troublesome for fishing, is casting is a bit of a PITA, but overcomeable. Good luck.
