Guess it depends on your taste, fish and cooking method. We tried lots of different seasonings since we love blackened tuna. Although it doesn't blacken very well (no sugar, but you could add some) we ended up with Red Lobster seasoning. Mild, but it adds nicely to tuna without overpowering it. Cook with butter. Tried olive oil, but didn't turn out as well.
