My DC 245 has a mercury 300 with the vessel view. It takes the fuel consumption from the engine and displays the remaining fuel on board. It is dead on accurate. Every time I fill up, I’m within 1 gallon of the fuel remaining on board.
My concern is, if I don’t fill up the tank (or accurately record how many gallons I added) I really don’t know how much fuel is on board- fuel fill shuts off, I mistakenly think the tank is full and drive off?
I see what appears to be a sender unit in the tank, but it does not appear (that I can find) anywhere to read. I much prefer using the engine consumption because of its accuracy, but I would feel better also knowing what the tank thinks is in there.
Having owned two other boats with long flat rectangular tanks, I know the fuel level tank sender is mostly a guesstimate of an approximation, especially with low fuel on board.
I also sent this question to the dealer.

Does your system not have a setup mode, whereas you tell the system how much fuel your tank holds? If so reset the system after filling up your tank and enter the amount of gallons your tank holds. You will be basically starting fresh. I run the engine management system through my Garmin. It will give me fuel remaining, fuel flow, fuel economy (gph). You are right 100% dead on. The other thing you can do id add a fuel tank sending unit and a stand alone gauge to you dash. They are not the most accurate, but they may give you a little peace of mind.

I got it figured out. There was a option to set the fuel gauge to engine use or tank sender. So I kept the engine gauge/screen to engine use and set the MFD (Lowrance) to tank level. Which is pretty much ideal for what I was looking for. Setting the fuel level was never an issue, it was independently knowing what was in the tank. The engine use and fuel remaining has been very accurate- from the engine. I like your by-line

Thank you for your comment on my by-line.
