Seems to be the fresh catch right now in town at Neptune Beach. Never had trigger but I've heard it's good just a PIA to clean?

Possibly the best tasting fish I have eaten thus far. Almost has kind of a natural sweet taste to it. I'd love to have a freezer packed with it.

Cleaning not that bad, it’s the tough skin, it’s like armor. 2 choices, get an electric fillet knife and have at it. Option 2 (what I do as I don’t have an electric knife), there is a soft spot just behind the head about the size or a quarter. You can find it just pressing around and you will know it when you do. Stab here. Put knife down. Grab some pliers and peel skin off. Now fillet like normal.

Filleting triggerfish is easy. Ya just have to do it "inside out, and backwards". Meaning, poke your knife in at the tail shallow and move toward the head (that's the backward part), cutting the skin from the inside out all around the filet. Then fillet as normal. Works well on any tough-skinned or heavily scaled fish, like tripletails or large snappers.
As for the taste, I haven't eaten any gray triggers from the reef zone... but have eaten several of the ocean tallys caught way offshore on weedlines. Pretty good.

Uncle Buck has it tight. Clean backwards or use a box cutter.
Probably my favorite fish to eat.

Wow, I guess I don't know what I'm missing.
This local joint has a fried trigger sammich on their specials menu. Think ill give it a go tomorrow for lunch. Is it good fried?

Yes sir. I prefer grilled because it’s so light. You will enjoy it however it’s cooked.

Try this. Trigger filets, make an egg wash. Get some Panko bread crumbs and mix in some grated parmesan or cheddar cheese, add some coarse ground black pepper and some sea salt in with the bread crumbs and cheese . Dip the filets in the egg wash and coat them with the bread crumbs and cheese mixture. I use virgin olive oil in a pan, fry the filets for about 2 minutes each side or until they are a nice golden brown. Serve with your favorite side and Enjoy.

I wish! I can catch the sea bass like that but have only caught a couple of triggers around here. We used to take a trip out of Ocracoke every fall for them. The cleaning parties went on all night but they are the BEST eating!
