Another way is to start the cut with the serrated bait knife through the skin, then use your regular filet to finish cleaning it.

Wow, I guess I don't know what I'm missing. This local joint has a fried trigger sammich on their specials menu. Think ill give it a go tomorrow for lunch. Is it good fried?

My "inside out, and backwards" technique has worked great for me... but I think I'll try this method next time. (Learn something new every day!)

Never did get to try it... it was a short two days and my wife wanted to try a different place to eat for lunch on the day we left and their specialty was burgers so no trigger on the menu there.

I remember when I was MUCH younger going to Bimini with a couple buddy boats. We'd come back to the dock with a couple dozen triggers and get laughed at. Now they're frggin gourmet fare. I was way before my time but back then nobody wanted to clean them.
