I just bought a 2007 Sailfish 2360 24ft center console with a 250 hp 4 stroke Yahama. I have a very strange electrical issue. I launched my boat to put in my slip and shut the motor off. I tried to start it up 30 min later and nothing. No tach, mph, or rpm gauge worked and no trim. The VHS radio, regular radio, gps all work no problem. I obviously have limited electrical wiring knowledge, but my initial thought was a fuse of some sort. Checked everything in the dash that I could see that had a fuse and none of them tripped. Checked the starboard side of the motor after taking the cowling off and found some fuses there. Checked all of them and there was not an issue. Anybody have any idea what it could be??

Welcome to the forum.
From what you have stated so far it looks like the problem is confined to just the engine. The ignition switch and gauges all get their power through the engine wiring harness. You can try this and see if it sheds any light on the issue if you have a volt meter. Attach the negative lead of the meter to a ground you know for sure is good like one of your batteries. You might have to connect the negative probe to a wire long enough to reach your source for ground. Don't try grounding the meter to the engine. You're going to now test and see if you have 12 volts on the engine by going to the fuses on the engine that you mentioned in your post. At the top of each fuse there are two small openings that allow you to touch your meters probe to. Assuming the fuses are good you should be reading battery voltage on either of the openings. If you get no voltage reading on any of the fuses the problem is probably the positive lead of the engine. If you do see a voltage reading then the engine source for ground might be the issue.

You should have two large main switches on your boat, one for the engine and one for the electronics. You should also have multiple batteries, one for the electronics and one for starting the engine, including powering the gauges. Since your gauges are not coming on, it sounds like you have a battery or main switch issue. The switches do break. My 2006 switch broke apart a few months ago, where no power was going across it. Hope this helps.

Any electrical issue I start by cleaning battery connections. Especially neg side.
