Have a Fusion 750 head unit, 6 Wet Sounds 650 speakers powered by 4 channel amp, damn forgot the name....
Anyway, stereo seems pretty loud when I turn up the volum but I seem to recall it being louder before I messed with it on vacation. It seems when I get to a certain point on the head unit volume meter, like 75% the volume wont go any louder even the volume meter shows me turning up the volume to max.
Any ideas?

The one key piece of information would be the brand and model of the amplifier. I was going to check online for a manual and see if it has an adjustment for line level or input sensitivity.
The following is so that finatic can follow along:

It's a Poly Planer class D amp. The gain or whatever they call it is already set at 90% more.

I do see that the Fusion has a setting for Gain, the amp as well has an adjustment for input sensitivity adjustment that is labeled as Level. Probably not the problem since it was working well, but it's something you can double check and eliminate as a suspect.

It's the level that is turned way up, almost to max. The Fusion volume set to g is turned to max level too, maybe that's what they are referring to as gain? In either case both of these adjustments seem to be maximised. I used to be able to turn up the stereo and hear it pretty clearly while underway, now it seems tapped out at a certain volume despite my input.

This might be a dumb question but are all the speakers working correctly? Try using the fade and balance on the fusion to see if they are all playing at the same sound quality and level. Rag’s

All speakers are working as they should, clear and loud while at rest when I turn up the volume, but again, I used to be able to turn up the volume so loud that I wouldn't even go any further, now the volume seems to max out at say 75%.
On vacation I tinkered with a bunch of settings on the amp so wonder if that tinkering mucked things up?
Ideally I need a 6 channel amp to really drive all 6 speakers good. 2 of the speakers are only driven by the internal amp in the head unit which isn't very powerful, but that's an entirely different story.

Ok f'd with it some more. Turned up the level to about 98% seems to have solved the problem.

Ok new problem... Left front speaker stopped working while I was out testing. I reversed the connection on the speaker because I thought it might be phase separated. Well back at the dock I noticed it wasnt working. Thought the speaker wasblown, so swapped it with the right, nope, still works. Cut off connections thinking maybe bad connections, then stripped wire and put it to speaker, nothing. Rain chased me out so couldn't finish. Did I screw up the amp and that channel when I swapped the wires?

Speaker phasing is not the issue here. If two speakers are out of phase it means that mechanically the cones of the two speakers are moving in opposite directions of each other. This would result in some loss of bass to the listener if they're standing in the right spot, but mids and high frequencies would still be heard. Out of phase does not result in a speaker being completely dead with no sound.
If you take the two sets of speaker leads at the amp and switch sides, check to see if the problem changes sides or remains in the same side. If the problem changes sides the amp have a blown channel. If the problem remains in the same side this might be better news for you. You may have a broken wire or connectivity issue, which should be easier to isolate and fix.

To clarify, I swapped the wires when the speaker was working earlier this afternoon. It wasnt until sometime after I swapped the speaker wires did it stop working. I dont see how this could be coincidental?
When I swapped speakers wire at the speaker the speaker worked and sounded good. The only reason I did this is because my wife heard some static/distortion from this speaker yesterday.
Accessing the speaker wires/connections on the underside of my amp is damn difficult since I got it mounted on the inside of the console behind the access hatch.
Could swapping the speaker wires and cranking up the volume cause a channel to blow???
