I got hungry for the recipe that I posted on page 1, so here is a photo of the finished product. Grilled red snapper with a lemon caper cream sauce. Served with seafood gumbo, green salad and a roll.

Here are a couple that i like:
Coconut crusted mutton with orange sauce
A nice mutton fillet Coated with flour, then egg wash, then sweetened coconut flakes mixed with Italian breadcrumbs (2/3 coconut, 1/3 breadcrumbs) Pan fry in peanut oil.
For the sauce heat some Indian river orange juice in a small pot. Add in some heavy cream. About 2/3 OJ and 1/3 cream. In a small pan make a roux (flour and butter). Slowly add the roux to the OJ/cream sauce until it thickens up some.
Pour sauce over fish and enjoy. I like to have a baked potato with this because the sauce goes good on the potato.
Creamy baked fish
I like to use wahoo but its works good with dolphin. A little S&P and some paprika on the fish. Saute 1 chopped onion with 1/4 cup of butter and some fresh garlic. Cook until tender. In a bowl mix 1/2 cup sour cream, 1/2 cup mayo, 1/2 cup grated cheddar cheese, 1/4 cup grated Parmesan cheese. Add in onion/butter/garlic mixture and mix.
Set fish in a glass baking dish. Cover fish with sauce. Bake covered at 400*F for ~30min. Sprinkle breadcrumbs on top and bake uncovered until brown. Also sauce is good over potatoes.

Learned this summer on charter boat, microwave tuna either from day before, or a skippy fresh from day. Cut to small steaks, drizzle with soy sauce, top each piece with small piece butter, Old Bay to taste. Microwave til white, 3-4 minutes, usually 1 minute at time, squirt of wasabi on side, Probably the most moist tuna you could ask for, good at home, great just outside 100 fathom line. So you're the guy that microwaves fish at the office for lunch....

Not really a recipe but I will admit to having more than one microwaved Barracuda sandwich. Fresh out of the water and into the microwave. There was nothing wrong with that fish sandwich.

Yea I think that this is the missing part to my cooking, I’m in middle of fishing 4 days straight, lots fresh fish coming on deck daily, Wrap up from day before late in evening, out next day at 4 Am, not much time to buy lunch. Cooking fresh tuna in boats microwave, instead of fried chicken or whatever else left in boat galley I can go from whole fish to plate in 10 min, back to tending fish gear, boating fish.
Lot out of compliments on fish prepared in this circumstance, in a tip based work environment, I will be continuing to share fish prepared this way next season.

Buffalo Mahi Bites
Something I threw together as an appetizer after we slayed a bunch, was house a favorite, even folks that dont eat fish gobbled them up.
Cut mahi filets into bite size pieces easy to pick up approx 1" wide x 3" long pieces.
Preheat pan with peanut oil.
Salt and pepper raw fish.
Dredge each piece in egg and panko (or your favorite batter) and fry a couple of minutes per side until golden brown.
Warm Texas Pete's in a sauce pan, add half stick of butter and some garlic powder, melt and stir.
Dredge golden fried mahi bites in the buffalo sauce and enjoy with your favorite blue cheese and salary. YUM

Here is my recipe for making blackening seasoning. It goes great on ANY seafood. 1 tablespoons of sweet smoked paprika 1.5 teaspoons of cumin 1 teaspoon of garlic powder 1 teaspoon of onion powder 1 teaspoon of dried oregano 1 teaspoon of dried thyme 1 teaspoon of salt 1 clove crushed into a fine powder 1/4 teaspoon of cayenne pepper 1/2 teaspoon of fresh ground peppercorns
I usually adjust the cayenne depending on who I am serving. If kids are going to be eating the fish, I omit the cayenne, if it friends and family, I use 1/4 teaspoon, if its all fishing buddies its 1 teaspoon.
