Fresh Salmon filet (skin on). Place on a soaked cedar board, baste with a 50/50 mix of dark rum and maple syrup (REAL maple syrup; not that Aunt Jemima crap).
Place cedar board on grill. Baste several more times. 12-15 minutes cook time or until meat is firm and flaky.

Ok, I know a lot of you will probably scoff at eating bluefish, and I agree, but here is a recipe that never fails.
As soon as you catch it slit the throat and bleed it, preferably overboard, one of those old fashioned chains that goes in the mouth out the gills works great. When it's bled out, immediately ice it.
Filet and cut away as much of the blood red meat as possible.
Soak in half and half with a healthy dose of kosher salt thrown in for at least 4 hours, in fridge.
Take out and rinse, squeeze lemon juice generously over both sides and salt and pepper.
Let sit for 20 mins, then pat dry with paper towels.
Coat with a thin layer of mayonnaise, lay flat on a piece of tin foil, cover with chunks of tomatoes and red onions, add a chunk of butter, close the foil tightly.
Put on a hot grill, at least 400 degrees for 2 minutes.
Throw that $hit in the garbage and go out for dinner somewhere nice, because bluefish is awful no matter how you cook it!!
