Smoked xxxxfish spread (I prefer Spanish mackerel) Pound of smoked fish
2 tsp fresh minced onion 2 tsp chopped celery 1 clove chopped garlic 2 tbsp chopped sweet relish 2 tbsp fresh chopped celery Mayo to your liking (start w 3/4 cup or so) Cayenne pepper (optional) Tobasco (optional)

Mucky, what do you do to your fish? Do you brine it, or just start smoking it?
I use a similar recipe. I brine my fish before smoking, but others just smoke it fresh.

No I don’t brine, just fresh I mostly smoke oily fish and drying out isn’t an issue (I tend to purposely “over smoke” (to make more of a spread instead of dip) too and it turns out fine). I’ll even do AJ without brine and it’s yummy as well

I always do a brine. Water, brown sugar, soy, garlic and salt.
Might end up smoking some of that wahoo for dip. My dip recipe is pretty much what you said but no celery. Also I’m usually lazy so I do garlic powder instead of fresh garlic.

I have done AJ as well. Tuna, AJ, king mackerel and wahoo is what I have tried. I may try not brining next time to see how it goes.

Speaking of smoked fish. I've often done smoked kingfish but in the "olden" days we used to always keep the first sailfish of the season strictly for smoked fish. Of course back them you could even buy it at the local fish smoke house. They'd take your sail in and smoke it and you got one fillet and they kept one. For the sailfish fillets, we used to brine it in salt water and orange juice over night.
Another interesting tidbit I learned from a friend who is a high end chef who has worked as head chef at the several fancy restaurants. He made some smoked fish dip for us with a similar recipe as Ol Mucky without the celery but instead of using smoked fish, he used baked fish and that liquid smoke in a bottle that you use on meat. It was to our surprise, just as good as regular smoked fish, if not better.

Smoked sailfish is really good. I would say that wahoo and sailfish are my top two. Heres what was for dinner last night. Cheesy wahoo from the recipe i posted earlier. Fresh out of the oven Some green beans and mashed potatoes to go with it. I may have added some sauce on the green beans after this picture.

I still get the comment 'you know its cheaper to go buy the fish....'. Just tell her the only thing worse than store bought fish is fish dinners bought in restaurants. YUK! Tell her that very few people have the pleasure of eating truly fresh fish. In fact unless I'm sitting some place that has commercial fishing boats sitting within a half mile I'd rather order meat.
